Although this long name, "Fukamushi-Sencha", may seem unfamiliar, you will be surprised. Many of the teas you see in the supermarket, even in Singapore, are fukamushi-sencha.


Tealife carries fukamushi-sencha, but haven't for a while. I stopped stocking our previous one because the quality varied too much between lots, and only started again after finding one I was happy to drink myself.


Let us dive into the details of this rich and mellow tea.

Introduction - What is Fukamushi-Sencha?

Fukamushi-sencha is a type of green tea that is extremely common in Japan.


Despite being much richer than normal sencha in taste, it is generally considered budget-friendly, and it also delivers a wider range of nutrients. This makes fukamushi-sencha a great candidate for your everyday Japanese tea.


So how is fukamushi-sencha different from sencha?


The difference lies in the manufacturing process. Both teas are steamed to stop the oxidation of the leaves, but the time spent steaming fukamushi-sencha is much longer. The name comes from this: 深蒸し (fukamushi) means "deeply steamed", so fukamushi-sencha translates directly as "deep steamed sencha".


This is not a vague marketing term. Japan's Green Tea Labelling Standard, maintained by 公益社団法人日本茶業中央会 (the Japan Tea Central Association), defines 深蒸し煎茶 as tea made the same way as sencha but steamed for two times or more the duration.¹ Kagoshima Prefecture's tea industry material gives the everyday figures behind that ratio: normal steaming runs 30 to 40 seconds, and deep steaming is two to three times as long.²


This seemingly minor adjustment leads to an array of differences in the character of the tea. Deep steaming enhances the richness of the taste and softens astringency, but it reduces the strength of the aroma.⁵ The brewed tea turns cloudy rather than clear, which can look less pretty than a normal sencha.⁵ It also makes the tea very easy to extract, which means short brewing times and good results with cold water.


The leaves of fukamushi-sencha crumble more, because long steaming weakens them. Small particles and powder break away during manufacturing, float into the tea, and are swallowed along with it. This allows nutrients that normally cannot dissolve in water to be consumed as well.⁴

Fukamushi-sencha is a great alternative to normal sencha. Try it and compare the two. It is a fun and enjoyable way to appreciate the differences.

The Taste of Fukamushi Sencha

Many Japanese people enjoy fukamushi-sencha for its rich, deep taste. You may be surprised how different it is from sencha.


Why is it so different?


The longer steaming allows heat to transfer through the entire leaf, weakening it. As the leaves then go through rolling and drying, small particles and powder detach. Those tiny pieces end up in your cup and are consumed directly, and they are a large part of why the taste is so much fuller.⁴


There is also a chemical change. Long steaming increases the water-soluble pectin in the leaf, and pectin is what gives the tea its thicker, rounder mouthfeel while suppressing astringency.³ Pectin is the same substance sold in baking shops for setting jam, and it behaves in a similar way here, giving the liquid body.


While the taste is richer than normal sencha, the steaming also reduces astringency and bitterness, which makes it a smoother drink. It does, however, reduce the fresh aroma that sencha is known for.⁵ That is the trade-off, and it is worth knowing before you buy rather than after.


A tip that saves a lot of guesswork: packaged tea sold in Japan must display a product name field called 名称 (meishō), and 深蒸し煎茶 is one of the officially defined names allowed there.¹ If you are unsure whether something is deep steamed, you can simply read the label rather than judging by the look of the leaf. This will usually be marked on a sticker on the back of the package with the ingredients information.


Why is Fukamushi-Sencha common in Shizuoka-cha and Kagoshima-cha?

Interestingly, you will find that fukamushi-sencha is very common in certain areas such as Shizuoka (Shizuoka-cha) and Kagoshima (Kagoshima-cha). In these places it can be difficult to find normal sencha at all. So why is this?


Part of the answer is climate. The area of Shizuoka where this method was developed runs hotter and gets more hours of sunlight than other producing regions. Tea plants respond to sunlight by making more catechins, which are the compounds behind astringency, and the leaves themselves grow thicker and fleshier. The result was a tea judged astringent and treated domestically as mid-grade.³ Deep steaming was invented to solve exactly that problem.


Part of the answer is the shape of the farms. There are roughly two categories of tea farm in Japan. One sits on the slopes of hills and mountains, in places such as Kyoto (Ujicha) or Honyama in Shizuoka. These farms are smaller, machine plucking is difficult on a slope, and the volumes are lower.


The other category sits on wide, flat farmland suited to large-scale production, where big machinery can work efficiently. Fukamushi-sencha is very common in this second category. Kagoshima is a good example: it has a high proportion of flat-land tea gardens, which has allowed heavy mechanisation, and it has now overtaken Shizuoka to become Japan's largest producer of unrefined tea.⁶


Once the method was established, it travelled fast. It spread beyond Shizuoka during the late 1960s and early 1970s, and by the second half of the 1970s deep steamed tea was being produced in tea regions across the country.³


The Health Benefits

Fukamushi-sencha carries all the health benefits of Japanese green tea, and a little more besides.


Like sencha, much of the benefit comes from catechins, a type of polyphenol with antioxidant properties. You can read about the details of catechins and other nutrients in Japanese green tea here.


The particular thing about fukamushi-sencha is that you also get nutrients you would not normally get from sencha. These include dietary fibre, chlorophyll, vitamin E, beta-carotene and minerals.⁴ ⁷ These are all present in green tea leaves, but they do not dissolve well in water, so with a normal sencha they stay in the leaves and go in the bin. With fukamushi-sencha, the crumbled leaf floats in your cup as fine particles and is swallowed, so you absorb them as well.⁴


This is also why it is worth drinking the last mouthful. The sediment that settles at the bottom of the cup, called 底だまり (sokodamari), is that insoluble fraction. Leaving it behind means leaving behind the part that makes this tea nutritionally different.


One claim you will see repeated a lot deserves a note of caution. Kakegawa, one of the great deep steamed producing cities, has the lowest cancer mortality rate of any Japanese city with a population above 100,000.⁷ That is true, but it is a statistic about a whole city, and cities differ in many ways at once. It does not by itself show that the tea is the cause. A large study called the 掛川スタディ (Kakegawa Study) did look into it properly, and reported reduced LDL cholesterol and reduced waist circumference among participants.⁷ That is a narrower claim, and a much better supported one.


Nonetheless, I would say drinking fukamushi-sencha regularly is a good health habit.

Futsumushi-Sencha

When shopping at a specialist Japanese tea shop, you may come across the name 普通蒸し煎茶 (futsumushi-sencha). Do not confuse this with fukamushi. 普通 (futsū) means "normal" in Japanese, so this is just normal sencha, named that way to distinguish it from the deep steamed kind.

Tokumushi-Sencha

You may also see 特蒸し (tokumushi), meaning tea steamed even longer than fukamushi, sometimes up to around 180 seconds.

Asamushi-Sencha

At the other end, 浅蒸し (asamushi) means lightly steamed, shorter than the normal 30 to 40 seconds.² These teas keep more aroma and give a clearer cup.

Fukamushi-cha

Since the term fukamushi refers to the length of steaming, it can be applied to other Japanese green teas too. Kabuse-cha and tamaryokucha can both be made by deep steaming. So can gyokuro, since gyokuro is defined by how the plant is shaded rather than by how long the leaf is steamed.¹ Fukamushi-cha is the general name for any green tea with a long steaming time.

The ideal brewing time is about 30 seconds. Because the leaf has already been broken open by the long steaming, flavour extracts very easily, so a short infusion is all you need. Use 4g of leaves to 120ml (4 fl oz) of water, but always check the instructions on the package, as it varies from tea to tea. You can learn more about brewing delicious fukamushi-sencha here.


Water temperature. Brew at around 70°C to 90°C (158°F to 194°F), depending on the grade of the leaf. Boil the water once, then let it cool, or pour it into a yuzamashi or an empty cup first, which drops the temperature quickly.


Water type. Soft water suits Japanese tea best. Tap water in Singapore is on the soft side, which makes it well suited, but do boil it before use.


Your teapot matters more than usual. Fine particles clog a small filter almost immediately, which is the most common reason a fukamushi brews weak and pours slowly. Two things matter and they are easy to confuse. The holes need to be fine, or the sediment pours straight through. The filter also needs to be large, or it blocks. The traditional ceramic strainer, with its hand-drilled holes over a small area, tends to clog with this tea. A fine stainless mesh spread over a wide area, such as a band running around the inside of the pot or a removable basket, works far better and also drains the pot more completely, so the leaves are not left sitting in water between brews.⁸


Try it cold. The same fineness that extracts fast in hot water works beautifully in cold. The Japan Tea Central Association specifically names deep steamed sencha as one of the teas best suited to cold and ice brewing, because it brews strongly.⁹ Cold water pulls out less caffeine and fewer catechins while the sweet amino acids dissolve readily, so a cold brew tastes sweeter and much less astringent.


Storing it. Green tea deteriorates from humidity, oxygen, light, heat and absorbed smells.¹⁰ Buy in small quantities and finish a packet within two weeks to a month. Keep unopened tea in the fridge or freezer, but let it return to room temperature before opening, or condensation will form on the leaves. Once opened, store it in an airtight, light-proof container somewhere cool and dark rather than in the fridge, where it will pick up moisture and odours.¹⁰


How is it made? (Manufacturing Method)

The plant. The species Camellia sinensis, called チャノキ (chanoki) in Japan, is used for all types of green tea, including fukamushi-sencha. There are many cultivars of this plant grown in Japan, each with different characteristics. Kakegawa, one of the most celebrated deep steamed producing regions, lists Yabukita, Tsuyuhikari and Saemidori as its recommended varieties.⁷


Cultivation and harvesting. Harvesting happens up to three or four times through the year. A tea plantation usually starts picking around spring, with the final harvest in autumn. Generally, the earlier the harvest, the higher the quality, because the plant builds and stores nutrients over winter and pours them into the first leaves of spring. As harvesting continues through the year, the nutrient content of the leaves falls. Fukamushi-sencha typically uses leaves from the first or second harvest.


Manufacturing. Japanese green tea is first made into 荒茶 (aracha), or crude tea, in three broad stages: heat the leaves to stop oxidation, roll and shape them, then dry them for storage. Fukamushi-sencha, like sencha, uses the most basic version of this: steam, roll, dry.


The steaming, called 蒸熱 (jōnetsu), softens the leaf and stops oxidation. It happens immediately after harvesting. For fukamushi-sencha the leaves are steamed two to three times longer than for normal sencha, so roughly 60 to 100 seconds against 30 to 40.¹ ²


One detail most guides leave out: on modern equipment, deep steaming is not always controlled by a timer. Belt-fed steamers are set by time, but rotating drum steamers are controlled by the tilt angle of the drum and how fast it spins, which determines how long the leaf takes to tumble through.³ A few degrees of angle can be the difference between one tea and another.


As you have read above, this one change makes a world of difference to the taste and to what the tea gives you.


Summary

Fukamushi-sencha is affordable, accessible, tastes good and carries a broader range of nutrients than ordinary sencha. That combination makes it a strong candidate for your everyday Japanese tea.


Brew it short, use a teapot with a decent filter, drink the sediment, and do not expect the bright aroma of a mountain-grown sencha. Try a cup and see whether you can pick out the differences from a normal sencha. That is one of the ways you can have fun with Japanese tea.

FAQ

Are there high-end Fukamushi Sencha?

Yes, absolutely. While deep steaming is commonly used to improve the taste of tougher leaves, it is also used to maximise the umami of premium leaves. There are many budget options, but there are excellent high-end ones too. Kakegawa's deep steamed tea has won the National Tea Competition's award for best producing region 24 times as of 2022, more than anywhere else in Japan.⁷

I drank a green tea in Japan that was very green in liquid color. What tea is that?

There is a good chance it was a fukamushi-sencha. The deep steaming breaks down the leaf, and fine particles stay suspended in the water, so the cup often looks a strong, opaque green. Interestingly, the official description of the deep steamed tea registered from Kikugawa describes the colour as 濃厚な黄緑色, a dense yellow-green,¹¹ which is a good reminder that what we see in the cup is mostly suspended leaf rather than dissolved colour.

I drank a green tea in Japan that was very green in liquid color. What tea is that?

No. Konacha is made from the fine particles sifted out during the finishing of sencha or gyokuro, and powdered tea is ground. Fukamushi-sencha is whole leaf tea that happens to fragment during manufacture. It simply contains more fine material than a normal sencha does.
