Ingredients
  • Kawahara Seicha has made tea in Ise since 1883, selecting, blending and firing every batch in house.
  • In 2003 they became the first producer certified under the Mie Brand for Ise tea, the prefecture's mark for quality and traceability.
  • Gyokuro is shaded from sunlight before harvest, which builds amino acids and holds back bitterness. That is where the deep sweetness comes from.

  • Deep steaming a gyokuro is unusual. Most makers steam it lightly to protect the delicate leaf, so this combination is rare.

  • Mellow on the palate with a natural, unforced sweetness, and almost no astringency to speak of.

  • The approachable way into fukamushi gyokuro, with Tengyoku-un as the step up when you want more intensity.

  • Vacuum sealed at the source to lock in freshness, which is why the packet looks uneven rather than plump. Green tea fades fastest in contact with air, so the tight, moulded shape of the bag is the aroma being protected.

Instructions
Brewing Fukamushi Gyokuro
Deep steamed leaf gives up its flavour quickly, so the aim is a short steep in water that is warm but not hot. That draws out the umami before any harshness has time to follow.

Leaf: 3 to 4 g per person
Water: boil, then cool to 70 C
Volume: 100 to 120 ml per person
Steep: 30 to 60 seconds
Pouring: when serving more than one cup, pour a little into each in turn, then back again, so every cup is the same strength. Always drain the pot to the very last drop.


Storage Instructions

  • Keep it away from heat, sunlight, and humidity as much as possible. Keep it sealed to prevent air and other smells from affecting the tea.
